Vegetable compote

Choose healthier and stronger fruits.

Wash well and allow to drain.

The jars are washed very well and drained well.

Put the whole fruit in jars, leaving about a finger empty, to boil.

Put 3 lbs of good sugar in each jar, then put enough water to cover the fruit well. Put the lids well, shake the jars a little to dissolve the sugar on the bottom, then put in a large bowl all the jars, in which they will be left to dry, about an hour from the beginning of the boiling process, with water about 3/4 of the size of the jars.

They are then removed from the heat, left to cool in the respective vessel until the next day, the jars are removed and wiped and then stored in a cool place, preferably in the cellar.
