RECIPE PREPARATION Crispy chicken:

Preheat the oven to 190 ° C. Process the peanut bread, chopped coriander, sesame seeds and lemon peel in a blender until you get a fine-textured composition.

Some time ago, a facsimile with the so-called "secret recipe" from KFC circulated on the Internet. That is a list of the 11 secret spices that are mixed with flour to form the crust of the famous KFC dishes. You can see it below. The quantities are given in teaspoons (tea spoon) and are related to 2 cups (cups) of flour. The 11 spices are: salt, thyme, basil, oregano, salt with dried celery, black pepper, mustard powder, paprika, salt with granulated garlic, ginger powder and ground white pepper.

I haven't tried this mix but you can do it and tell me how it turned out. I summed up the 5 spices I saw in Gordon Ramsay's "Buttermilk Fried Chicken" recipe (see also video at the end of the recipe): salt, pepper, granulated garlic, smoked paprika and pepper of Cayenne. A balanced mix whose sharpness can be adjusted from cayenne pepper or by adding hot paprika. The result was great!

I prepared 6 lower chicken legs (hammers, drumsticks) which are enough for 3 servings of fried chicken like KFC (or 2 larger portions).

Ingredients for chicken breast:

  • 1 kg skinless, boneless chicken breast
  • 1 teaspoon with a pinch of salt
  • 1/2 teaspoon freshly ground pepper, not ground

In a bowl, mix the flour with the starch and set it aside.

Beat the eggs in another bowl and set them aside.

For starters we will wipe off the excess liquid, if any, then cut them into thicker slices, I cut it to about 35 g, if you buy ready cut even better, but still preferably sauté the whole breast fillet.

Put the chicken breast in a bowl with all the spices. Mix the pieces of meat well so that they season evenly. Cover the bowl with a fresh foil and let them cool for at least 3 hours.

An hour before frying, take the meat out of the fridge and then pass it through the flour mixed with the starch.

The next step is to put all the pieces of chicken breast in the beaten eggs and mix them so that they cover evenly.

We take 3-4 pieces and pass them again through the flour mixture, so that we no longer have wet parts.

Heat a frying pan with oil and put the pieces, only when it is hot enough, ideally it would be at 190 degrees and must be covered with oil, that means on the big eye from the stove to the high heel.

Fry over medium heat, turning them carefully 2-3 times. Ideally, do not bite them too hard, otherwise they will not have a beautiful and crispy crust.

Drain on a grill or on a tray lined with kitchen towel.

Turn the chicken over and the other side, if you feel the need. Leave in the oven for a total of about an hour and a half - 2, depending on how big the chicken is and how tender the meat is.

Crispy baked chicken - tender and very juicy!

Ingredient:

- 2 tablespoons of sunflower oil

- & frac14 teaspoon ground black pepper

- 700 grams of skinless chicken breast

Method of preparation:

Preheat the oven to 220 degrees Celsius. Meanwhile, cover an oven tray with aluminum foil.

Sprinkle panko on the baking tray and mix it with the oil. Leave the tray in the oven for 3-4 minutes, until the breadcrumbs are browned, then take it out to cool.

In a bowl, beat the egg, mayonnaise, salt, garlic powder and pepper until you get a homogeneous composition. Set the bowl aside.

How to prepare Korean chicken - the method of the recipe
