Blackberry and blueberry tart

Mureeee, afiiineee !!!! Who wants? I offer them in the form of a super tasty tart, this time with sweet cream, a super tasty version. In fact, I don't think there is any tart that is not tasty as long as it is full of fresh seasonal fruits.

  • For dough
  • 100 ml sweet cream
  • 1 tablespoon brown sugar
  • 1 or
  • peel from 1/2 lemon
  • 1/2 teaspoon baking soda with a tablespoon of lemon juice
  • approx. 180 gr flour (depending on the flour used)
  • Filling
  • approx 250 gr walls
  • approx 200 gr blueberries
  • 200 gr sweet cream, 30% fat
  • 2 small eggs
  • 3 tablespoons sugar
  • For greased tray: a tablespoon of butter
  • a sachet of vanilla sugar sprinkled over the tart

RECIPE PREPARATION Blackberry and blueberry tart:

For the dough, mix the ingredients in a bowl then knead the dough obtained until you incorporate all the flour.

Keep the dough cold for at least 30 minutes.

Take the dough out of the fridge and spread it in a round shape and place it in a tart pan greased with butter.

Prick the dough from place to place and put it in the preheated oven at 170 degrees for 5-7 minutes.

Remove from the oven and place the fruit on top of the dough.

Separately in a bowl mix the sour cream with eggs and sugar and pour the obtained composition over the fruit.

Put the tray back in the oven for 20 minutes.

Remove the tray from the oven and sprinkle a sachet of vanilla sugar and / or powdered sugar on top.

    Put the milk in a saucepan with a spoonful of sugar and vanilla, over low heat.

    When the milk is about to boil, mix it with the yolk cream and put it back on the fire, stirring, until it acquires a creamy consistency. Then pass it through a sieve (to make sure you get a fine cream, without lumps) and leave it to cool. (It is best to cool the cream by covering its surface with a food foil, so as not to make the film on top).

    When the cream has cooled, place it in the shape of a tart, level it with a spoon or spatula and sprinkle the berries on top.

    You also need a tart pan, greased with a little oil. I used a round tray with a diameter of 23 cm.

    How to quickly make a fruit tart without baking?

    • use a tart base made of biscuits and butter. I use digestive biscuits and butter with 80% fat.
    • you can spread the butter biscuits only at the base of the tart or at the base and a little on the edge.
    • the cream is made quickly by mixing super creamy Greek yogurt with mascarpone, powdered sugar and honey. You can only use honey, increase the amount of honey and remove the powdered sugar from the recipe.
    • put in the fine cream of yogurt flavors according to preference: vanilla, lemon or fruit liqueur. I used orange liqueur.
    • the two layers, of biscuits and fine yogurt cream, match perfectly with seasonal fruits, fresh fruits. This way you will get a fresh, refreshing dessert.

    Fruit tart

    As I said, the recipe is simple. You need the following ingredients:

    • 200 g digestive biscuits
    • 100 g butter
    • 500 g Greek yogurt
    • 250 g mascarpone
    • 2 sheets of gelatin
    • 2 tablespoons orange liqueur (or other flavors)
    • 50 g powdered sugar
    • 2 tablespoons honey
    • fresh fruit: 250 g blueberries

    Start by preparing the cookie sheet. Melt the butter and add it over the finely chopped biscuits in the food processor. Put this mixture in a cake tin with a removable edge (diameter 20 cm) or in a tart pan. You flatten it by hand in an even layer. This will be the basis of the tart.

    For the cream, start with the gelatin sheets that you put in a bowl of cold water. After they have softened, take them out of the cold water. Add two, three tablespoons of warm water over them and stir until dissolved. Put the gelatin over the yogurt, mascarpone, powdered sugar, honey and mix the composition with a spoon or lightly with a mixer. Add whatever flavor you want to this cream, this time I put two tablespoons of orange liqueur.

    As soon as you have finished mixing the cream, you can put it over the cookie sheet. Decorate the cake with blueberries or any other fruit preferred by you or your family. If you want the fruit to stay on top, not to enter the yogurt cream, you can decorate the tart after it has been cold for a while. Let the tart cool for 4-5 hours or overnight.

    Tart with gin and blackberries

    1. Put the blackberries in a pan with the gin and sugar. Leave on low heat and simmer for 10 minutes until about 1 liter of juice is formed. Drain the blackberries, keeping the juices aside, then allow to cool completely. Put the juices in the pan and reduce to a thick syrup. Once the blackberries have cooled, mix with the corn.

    2. For the dough, mix the butter with the flour, 50g sugar and a little salt in a blender until the mixture resembles breadcrumbs. Then gradually add cold water until a dough is formed. Place on a floured surface and divide into two (about two-thirds and one-thirds), then form each piece of dough into a disc. Wrap each disk in foil, then cool for 30 minutes.

    3. Preheat the oven to 210C. Remove the larger piece of dough from the refrigerator. Spread up to 0.5 cm thick on a surface powdered with flour, then put in a tart pan. Add the blackberries and put in the fridge.

    4. Spread the second piece of dough in a circle. Remove the tray from the refrigerator and lightly moisten the edges of the dough. Add the second circle of dough, lightly pressing the edges with your fingers to seal. With a sharp knife, make a few slits and a hole at the top. Brush with beaten egg yolk. Cool in the refrigerator for 10 minutes.

    5. Bake for 45 minutes. Remove from the oven and leave to cool in the bowl for 2-3 hours, so that the filling can thicken. Serve with whipped cream.

    When I said quickly what to do, I was referring to the preparation, the waiting time being a bit longer, that's because, every hour, I took turns (3) to the freezer and mixed it to break the ice crystals formed. .
    I mixed the sour cream and I blended the fruits together with the sugar for about two minutes until I got a pretty dense sauce.
