Ingredients for garlic yogurt marinade

  • 350 grams of fatty yogurt
  • 1 lemon
  • 4-5 cloves of garlic
  • 30 ml. of olive oil
  • 1 tablespoon finely crushed coriander
  • 1 teaspoon salt
  • pepper to taste
  • 1.5 kg of potatoes
  • 4 young carrots, cleaned and cut into pieces
  • 1 red onion cut into large pieces
  • 1 leek, white and light green, cut into rounds
  • 3-4 teaspoons of olive oil
  • 2 rosemary branches
  • 4-5 thyme branches
  • salt and pepper

How to prepare lamb steak marinated in garlic yogurt

  1. Carefully clean the lamb leg (up to 1.5 kg) of silver skins and surface fat to get rid of the specific odor that many do not like. Insist until the pulp is well degreased.
  2. Wash the lemon well with warm water, shave the yellow part of the peel. Peel the garlic. Put them in the blender bowl together with the yoghurt, lemon peel, corinadr, salt, ground pepper to taste, garlic cloves, olive oil and mix until the garlic is completely crushed.
  3. Add the lemon juice and mix well. Put half of the sauce obtained in a jar with a lid and put it in the fridge, you will serve it with the steak.
  4. Put the lamb leg in a bag and pour the remaining yogurt sauce over it. Tie the bag with as little air as possible inside, knead the pulp so that the marinade covers it everywhere and put it in the fridge for 8 hours.
  5. Take out the bag the next day and let the lamb return to the kitchen temperature. Preheat the oven to 190 degrees Celsius.
  6. Attention: you can also cook a garnish with assorted vegetables with the steak. Mix all the ingredients from the recipe in the pan that will sit under the meat while baking. Be careful if you do not put vegetables in the tray to spread baking paper so as not to burn the juices that drain from the meat during cooking.
  7. Place a grill on top of the tray and place the lamb leg, well drained of the marinade, on it. Let it cook for an hour, an hour and a quarter, depending on the tenderness of the meat and the degree of "penetration" preferred. Halfway through the baking time, turn the lamb meat from one side to the other so that it browns evenly.
  8. After removing the lamb meat from the oven, let it "rest" for 15-20 minutes before placing it on the table. Eat it with the preserved garlic yogurt sauce, which you can "refresh" with a little chopped green parsley. GOOD APPETITE!

To make the pie filling with apples, wash the apples, put them on the large grater (with the peel, if you don't mind). Put them to harden in a non-stick bowl with 3-5 tablespoons of sugar. Add the cinnamon after 5 minutes. Stir occasionally and, when the juice evaporates, remove from the heat and leave to cool.

In a large bowl, rub the butter with the sugar. Add the vanilla essence and the egg and beat lightly until you get a creamy result. Add the cream, stir until smooth.

When the apple pie dough is no longer sticky, divide it into 2 equal balls. Sprinkle flour on the table and spread one of the 2 balls with the blender (enough to cover the tray in which you want to make the pie). Put the first sheet in the tray and place the filling on top.

Spread the second ball of dough (exactly as you did with the first) and then cover with it the filling from the tray.

Put the tray in the preheated oven for 30-35 minutes or until you notice that the dough has baked.

Remove from the oven and leave to cool slightly. Sprinkle powdered sugar over the pie and slice it.

2 teaspoons yogurt (2-3.5% fat)

Wash the vegetables, clean and cut the sticks. Sprinkle 2-3 puffs of olive oil over them and then squeeze the juice of half a lemon over it. Prepare the sauce from a teaspoon of mustard, 2 of yogurt, salt and parsley to taste (I really like parsley)


Tuna sticks with recycled rice

Often part of the steamed rice that we eat instead of bread along with the sauce dishes remains uneaten. You can & # 8220recycle & # 8221 this remaining rice and get some tuna meatballs that I really liked. I am very happy that I found a way to use it in a very tasty dish.
You can also try the Romanian pilaf, but it must not be juicy, you must lower it well over low heat and on a hob so that it does not smoke.

INGREDIENTS
1 or 1 + 1/2 cup of remaining steamed rice
4 tablespoons grated cheese
2 eggs
1 tablespoon breadcrumbs
1 small bunch of parsley
rosemary a few threads or 1 teaspoon grated dry and ground

PREPARATION

Knead everything by hand. You will get a slightly sticky composition.

7. In a very small saucepan (diameter 12-15 cm is mine) put a lot of oil, enough to cover the sticks well when you fry them. Heat the oil, on the eye of the lowest stove, at medium temperature, try with a grain of rice if it sizzles, it means that it is hot enough. Minimize fire.
8. Meanwhile, place the breadcrumbs on a flat plate. Form by hand (possibly very slightly moistened with water) rice sticks about 5-6 cm long and maximum 2 cm thick. Roll them on all sides with breadcrumbs.

9. Put them along the horns of a fork, and dip their sticks in hot oil, without crowding them. Enter about 6 in a series.

When they are browned on one side, you brown them on the other side in case they have not already turned on their own, they fry quite quickly.
10. Take them out with a fork or foamer, in a plate with a paper towel placed in two layers and let them drain even if they do not absorb much oil.

You eat them hot. Because they are with tuna, we ate them with a lemon sauce / emulsion according to the recipe here.

Put the dough in the paper-lined tray, spread it in a circle or square and bake for 10-12 minutes. Allow to cool and then place the sheet back in the baking tray.

For the apple foam, prepare the gelatin, and the peeled and cut apples are put in a pan with butter, lemon juice and two tablespoons of sugar. Cover and simmer for 15 minutes for the apples to become fondant. Then mix and mix with gelatin. Mix well and allow to cool. Whip the cream and a tablespoon of sugar and add to the completely cooled apple mixture. Place on the counter, level and place in the freezer.

For the caramel sauce, prepare the gelatin and caramelize the sugar. Separately, heat the cream and pour over the melted sugar. Remove from the heat, add the butter and return to the heat to blend and harden. Then add the drained gelatin, mix and allow to cool. Remove the cake from the freezer, pour the caramel sauce and leave to cool for 4 hours. Serve sprinkled with roasted hazelnuts.
