Rubbed beans

The beans are soaked in the evening and then washed well in several waters and boiled in a pressure cooker that we prepare as follows: beans, salt, 1 onion, carrot, parsley, celery, 2 tablespoons oil and enough water to cover it. Let it boil for about an hour but I left more.

Remove the vegetables and drain the beans from the water in which they were boiled in a sieve, then put them through a meat grinder on a smaller sieve: With the mixer, incorporate 300 ml of oil and garlic given through a small grater and also match salt and pepper.

While the onion beans are boiling, 3 pieces are cleaned and the scales are cut. Mix with flour, unwrapping each onion ring well. Heat 200 ml of oil in a pan and fry the onion in a frying pan. Remove with a spatula on absorbent paper to remove excess oil.

The beans thus prepared are placed on a plate and garnished with fried onions and green parsley and red roses.
