Fattoush is such a simple way to introduce Levantine flavours into your kitchen. Fresh salad ingredients - cos lettuce, tomatoes, cucumber - are tossed with pitta bread pieces and a fresh, lemony dressing.

  • 2 pitta breads, halved
  • 1 romaine lettuce, chopped
  • 2 tomatoes, diced
  • 2 spring onions, thinly sliced
  • 1 cucumber, diced
  • 1 handful sliced green olives
  • 4 radishes, sliced
  • 1 green or red pepper, chopped
  • 4 tablespoons chopped fresh mint
  • 2 tablespoons sumac
  • 1 tablespoon salt, or to taste
  • 4 tablespoons fresh lemon juice
  • 4 tablespoons olive oil

  1. Preheat oven to 220 C / Gas 7.
  2. Place pitta breads on a baking tray and bake in preheated oven until golden and crispy, about 5 minutes. Allow to cool, then tear into bite-sized pieces.
  3. In a large bowl, mix together lettuce, tomatoes, spring onions, cucumber, green olives, radishes, pepper and toasted pitta. Season with mint, sumac and salt. Pour in lemon juice and olive oil; toss to combine.

Delicious! I had many rave reviews from my dinner guests. I used zatar, which has sumac in it, instead of the straight sumac. Will definitely make again!-25 Sep 2011
