RECIPE PREPARATION Food with nettles, nuts and rice:

Clean the nettles, leaf by leaf, wash well and cook for 20 minutes.

Strain the boiled nettles from the juice (we do not throw the juice) and chop them with a knife.

We boil the rice together with the grated carrot. After 10-15 minutes, add the nettles and nettle juice.

Separately, in a pan, put the finely chopped onion in hot oil and let it harden until it starts to brown. Add the hardened onion over the rice that is still on the fire and let it cook for another 10-15 minutes. Add oregano, salt and pepper to taste.

We serve nettle food with walnuts.

  • a large bowl of freshly picked nettles

This dish is so fasting, but on other occasions you can replace the oil with butter and add 50 g of grated Parmesan cheese!

One of the culinary nightmares of my childhood was nettles. In the spring, my family forced me to drink the water in which the nettles were boiled (disgusting for a child), on the principle "it has iron, mother!" And to eat what they thought was a delight: eating nettles with polenta and egg yolks. . For years I endured and I didn't think I would ever be able to see this plant again without the sequelae. As the post begins you wouldn't expect a happy ending, would you? :))

Well, I don't know how and when exactly it happened (I think I gave them another chance and gave myself another chance), but I've been addicted to nettles for a few years. Not only in the spring, I like them so much that I freeze them and enjoy them for a few more months, after the season is over.

So, nettles to be in this period, that I have enough ideas. I told you last year about the classic nettle food, creamy and fine. Now I have all sorts of other ideas: meatballs with potatoes, spinach and nettles, nettle pie, pancakes filled with nettle and cheese puree, or nettle pancakes. For pancakes you can use one of the recipes I have told you over time: simple pancakes or pancakes with urda. Once you have decided, add to the composition nettles boiled for a few minutes in salted water (maximum 5 minutes, to keep that wonderful green), cooled and coarsely chopped.

All you have to do is fry small pancakes, and as you take them out, put a thin slice of butter between them. For an even tastier dish, when you eat them put over a tablespoon of fermented cream.


How to make rice in a pressure cooker
