Beat the egg whites well with a pinch of salt, then add the sugar little by little. Beat well until everything becomes like a thick and shiny cream.
Finely chop the walnuts together with a tablespoon of starch, until they become like a powder. Add them to the beaten egg whites and mix from the bottom up, slowly, slowly. so as not to leave the composition. Coconut cookies with only two ingredients - they simply melt in your mouth
I have to be honest with you - the first time I ate these cookies from a confectionery and I was surprised at how good they were. So, I decided to make them at home too. They are extremely quick to make, the recipe is super simple and very, very tasty. Some people also call them macarons, but I think the whole name of cookies suits them.
For cookies you need:
Method of preparation:
In a bowl put the coconut flakes and mix with ¾ of the amount of condensed milk. The composition obtained must be a little drier - that is, if you squeeze between your fingers, only very little milk will come out. That's why it's good to have more coconut at hand if it comes out too wet, so you can top it up.
Also, if it is too dry, add more milk. From the composition are formed cookies by hand (round / flattened) or with a posh (if you want to look better).
Put the cookies on a tray lined with baking paper and put in the preheated oven. As soon as they have browned, they must be removed from the oven - if you leave them too long, they dry out and are not as good. They are made very quickly, so you have to be super careful.
Ptr. the two sheets with beak you need:
4 tablespoons cocoa
sour cream or yogurt (as it contains)
1/2 sachet baking powder
rum essence and 100gr chocolate.
Form a crust with all the above ingredients, then leave to cool.
Now we deal with the composition with the coconut (the white one).
Beat 8 egg whites with 250gr sugar and when the foam has hardened enough, add the 200gr coconut. Stir carefully from bottom to top.
We return to the shell in the fridge.
Divide it into two parts, one part is stretched and placed at the base of the tray, it is pushed from place to place, the composition with coconut is poured over it and then the other part of the stretched shell is placed to cover the entire surface of the coconut composition. Push the entire surface of the cake with a toothpick and then bake for 40 minutes at 180C.
After passing the test with the toothpick (it was baked for me in 40 minutes), it is turned over on a flat surface, the edges are removed.

Method of preparation
A normal dough is made. Rub the butter with the ammonia sugar, put it in the milk and mix it with the flour, then mix the paste obtained from the sugar rubbed with butter, mix it and knead it well. Make 2 sheets that bake on the bottom of the tray.
In a pot of boiling milk (with double walls, including water), mix the yolks well with 200 g of sugar. Then add flour and a little cold milk. Meanwhile, boil the rest of the milk with the vanilla. Pour the boiled milk over the previous composition, mix very well and put on the fire. It is good to mix the composition continuously, so as not to make lumps. Boil (and mix) until thickened well and until the smell of raw flour disappears.
Remove from the heat, add the butter and mix well. Whisk the egg whites and at the end add 100 gr. sugar and mix with the other composition (hot).
Mixing is slow, as usual when adding egg whites. Put the cream between the sheets, then let it cool until it hardens. Optionally, a layer of whipped cream can be placed on top of the cream.

The 8 eggs are separated, and the egg whites are beaten with 250 gr of sugar. Over the beaten egg whites add the raisins, cherries, roasted and chopped hazelnuts, ground walnuts and coconut. At the end, add 1/2 cup of flour and 1 sachet of baking powder. Mix everything very well, then turn over in a tray lined with baking sheet and put in the hot oven. Bake for 30 minutes on low heat.
The 8 yolks mix well with 8 tablespoons flour and 2 tablespoons sugar. A sticky dough is obtained which is divided into two equal parts and 2 sheets are spread on the well-floured top. Bake the sheets on the back of the same tray.
1 packet of butter rub well with 100 grams of sugar and a vial of vanilla essence. (Attention: the sheets are worked quickly, while they are warm, because they are very breakable!)
Assembling the cake:
Put a sheet and spread half of the butter cream over it. Place the egg white on top of the first sheet. Grease with the other half of the butter cream and put the second baked sheet on the back of the tray.
Melt 200 grams of chocolate and mix with 50 grams of butter then pour over the cake and smooth well. Leave to cool until the cake hardens, then cut into squares.
Ingredients for the walnut top:

150 gr ground walnuts
4 lg flour
1/2 sachet baking powder
1 sheet Lica (Neapolitan meaning: P)
Ingredients for the coconut top:
6 egg whites
9 lg old
150 gr coconut
4 lg flour
1/2 sachet baking powder
1 lgt almond free
1 sheet Lica (Neapolitan meaning: P)
12 lg old powder
2 sachets of vanilla sugar
1 lgt vanilla essence
300 gr butter
+ grated chocolate for garnish
Methods of preparation.
For each top, beat the egg whites well with the sugar, put the possible essences, then incorporate the mixture of flour, walnut and baking powder and pour the composition in the tray over the Lica sheet. Put the tray in the oven at 180C until the top is browned on top and no longer sticks.
The yolks are mixed well with the sugar until they lighten in color and increase in volume, then they are put on the steam bath until the cream becomes thick and binds a little more. After removing it from the heat, add the vanilla sugar and the essence, then leave it to cool. Meanwhile, mix the butter to make it creamy. When the cream has reached the butter temperature, pour a tablespoon of cream into the butter until smooth.
Put 2/3 of the cream between the sheets, then the rest on top and garnish with grated chocolate. Leave to cool and cut, preferably the next day.
Beat 8 egg whites with 200 g sugar, 2 tablespoons flour, 1 baking powder, 50 g poppy seeds, 150 g coconut. When it is beaten, it is poured into a greased tray and lined with flour.
2 eggs, 2 tablespoons water, 4 tablespoons sugar, 4 tablespoons flour. Beat and put in the oven.
Rub 8 yolks with 300 g of sugar, 2 sachets of ness, 150 ml of milk and boil on steam. Leave to cool, then mix with 300 g of margarine. Top with grated chocolate.
Ileana cake with walnut cream
Ingredients for the walnut filling: 4 eggs, 150 g sugar, 170 g ground walnuts, 1 tablespoon plain breadcrumbs, 1 tablespoon rum essence, 1 sachet of vanilla sugar, grated peel of ½ lamiae, 1 pinch of salt, 150 g butter, 50 ml milk
Method of preparation Preparation of the filling. In a bowl put the 4 whole eggs, sugar, salt, grated lemon peel (use a non-sprinkled lemon) and vanilla essence. Mix the composition until it foams and lightens in color. Add ground walnuts and a spoonful of breadcrumbs, mix well and at the end add melted and cooled butter and warm milk. Homogenize the composition well and set aside until you prepare the dough.
Countertop preparation. In a bowl, separate the egg whites from the yolks. Mix the egg whites with a pinch of salt until they become foam. Over them add the vanilla essence, sugar and continue mixing until you get a hard foam like a meringue. In the composition add the yolks one by one and mix after each yolk added, melted and cooled butter, oil in a thin thread and mix for about 2 minutes. At the end, add the sifted flour mixed with the baking powder, and mix with a spatula with movements from top to bottom until all the ingredients are perfectly homogenized and do not remain lumpy. Pour half of the dough composition into a tray measuring 25x35cm, lined with baking paper. Put the walnut cream over the composition, level it and put the rest of the dough composition over it.
Put the tray in the oven heated to 180˚ and bake for about 25-30 minutes until it browns nicely on the surface. Leave the countertop to cool in the pan then powder and serve and serve.
